Adam's Apple Squash

Ingredients:
  • 4 pounds squash
  • 1 teaspoon Himalayan crystal salt
  • 1 teaspoon garlic powder
  • 3 tablespoons extra virgin olive oil, cold pressed
  • 1 teaspoon whole peppercorns, ground
  • 1 1/2 cups skim milk
  • 2 medium Granny Smith apples, cored and diced
  • Instructions:
    1. Wash and peel squash and cut into bite-sized pieces.
    2. Put the squash in a large pot and cover with 1 inch of cold water. Bring the water to a boil over high heat and cook until the squash is tender, about 10 minutes.
    3. Heat the skim milk in microwave or small sauce pan. When the squash is done, drain the water. Add skim milk, extra virgin olive oil and garlic powder, and mash.
    4. Fold in apples and season with the Himalayan crystal salt and ground peppercorns.
    5. Transfer to a serving bowl and serve.
